Cucumber Sandwiches

Are you looking for a great snack to take to a party?  These have been a hit everywhere I go and they are very easy and cute as can be. 

You'll need:

3 T. mayonnaise
1/2 t. hot sauce
1 (8 oz.) package of cream cheese, softened
1 ( .7 oz ) envelope of Italian dressing mix
1 loaf cocktail bread- these little loaves are usually in the bakery or deli section of the store
1 large cucumber thinly sliced into about 36 slices

Combine first 4 ingredients in a mixing bowl and beat with a mixer until smooth ( you can do it with a spoon if you cream cheese is soft enough)

Spread cream cheese mixture over bread slices and top each with a cucumber slice.  A sprig of dill makes a pretty garnish.

You can make the cream cheese mixture ahead of time and store in refrigerator.

You'll end up with about 3 dozen little sandwiches and they look very pretty on a platter.

  2. I love cucumber sandwiches and can't wait to try your recipe. You can use regular bread too and cut them into shapes - dinosaurs, triangles, leaves or flower shapes, etc.
