Grilled Vegetable Packets

This is a highly customizable recipe- use whatever is available fresh and sounds good to you.  I don't think you can mess it up.

You'll need:
2-3 potatoes- cubed
1 small onion- sliced
1 carrot sliced
1 zucchini sliced
2 tomatoes chunked

You'll need 4 pieces of foil large enough to make packets.  On each piece of foil divide all the ingredients evenly.  You can put a pat of butter and/or a drizzle of olive oil over the veggies.  Season to taste with whatever sounds good to you, but just salt and pepper is delicious.    Fold the foil up and seal the edges tightly.  Grill for 20-25 minutes or until potatoes are tender. 

Great to prepare when you are grilling meat and clean up is so easy!
